Savory Roasted Chicken & Veggies
- 4 boneless chicken breasts or bone in chicken thighs
- 2 cups fresh broccoli florets
- 2 cups fresh cauliflower florets
- 5 cloves fresh garlic, roughly chopped
- 1 cup fresh baby carrots
- 1 cup red onion, cubed
- 1 package The Little Potato Company Garlic & Parsley flavor
- 1 sweet potato, peeled and cubed
- 1 teaspoon dried thyme
- 1 sprig fresh rosemary, chopped
- 4 slices thick cut bacon, slices thin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Preheat oven to 425 degrees.
- Line baking sheet with parchment paper.
- Place all of the veggies and potatoes in a gallon sized Ziploc bag.
- Drizzle the contents with olive oil and seasoning packet.
- Shake the contents and then place on the baking sheet.
- Add the chicken to the bag and shake.
- Place chicken on top of the veggies.
- Sprinkle the chicken and veggies with slices bacon.
- Cook for 25 minutes.
- Serve warm with your favorite salad!
