Herb Artichoke Dipping Sauce
- 1 large egg yolk, at room temperature
- 1/2 teaspoon Dijon mustard
- 3/4 cup olive oil (good quality)
- 1 teaspoon white-wine vinegar
- 1 1/2 teaspoons fresh lemon juice
- 1/4 teaspoon white pepper or pepper
- 1/4 teaspoon lemon zest
- 1 teaspoon fresh dill
- 1 teaspoon minced shallots
- In a blender or using an immersion blender, beat together the egg, dijon mustard, and 1/4 teaspoon salt.
- Slowly add in the olive oil until it is incorporated into the mixture.
- Then slowly pour in the white wine vinegar, lemon juice, and pepper until the sauce thickens.
- Pour the mixture into a small bowl and stir in the lemon zest, dill and shallots.
- Chill till you are ready to serve.
