Fancy Chocolate Pudding

Fancy Chocolate Pudding
- 2 1/4 cup whole milk
- 1/2 cup sugar
- 3 tablespoon unsweetened cocoa powder
- Pinch of salt
- 3 tablespoon corn starch
- 2 egg yolks
- 1 egg
- 8 ounces bittersweet or semi sweet chocolate chips
- 2 ounces unsalted butter
- In a saucepan, whisk together the milk, cocoa, sugar and salt.
- Bring to a rapid simmer.
- In a small bowl whisk together the cornstarch and eggs.
- Using a ladle add a spoonful warm milk mixture to the eggs while whisking.
- Add 2 more spoonfuls of milk continuing to whisk.
- Now reduce the heat of the remaining cocoa/milk mixture.
- Combine the egg and cocoa mixture to the warm milk by rapidly whisking.
- Continue to whisk together until the pudding becomes thick enough to coat the back of a spoon.
- Remove from the heat and stir in the chocolate chips and butter.
- Continues to rain until chocolate and butter is melted and pudding is velvety smooth.
- Use a little too poor the hot pudding into cups.
- Cover with plastic wrap and chill for 2 to 3 hours.
