Lemon Garlic Pasta
- 7 cloves roasted garlic
- 1 small onion, diced
- 1 teaspoon lemon zest
- Juice of one lemon
- 1/4 pound fontina cheese, cubed
- 1/4 cup Parmesan cheese
- Salt and pepper
- Hot spaghetti noodles
- Sauté the onion with the roasted garlic and lemon zest.
- Add the spaghetti noodles and lemon juice to the pan.
- Sprinkle the hot pasta with Fontina and Parmesan.
- Stir the cheese in to the pasta add spoonfuls of hot “magic pasta water” to the pan to create a sauce.
- Add salt and pepper to taste and serve with a sprinkling of fresh Parmesan cheese and chopped Italian parsley.
