Pumpkin Spice Nut Blend
- 1 cup cashews
- 1 cup walnuts
- 1 cup whole pecans
- 1/2 cup pepitas
- 1 cup roasted unsalted peanuts
- 1/2 cup macadamia nuts
- 2 egg whites
- 3/4 cup brown sugar
- 1/2 teaspoon salt
- 1 tablespoon vanilla paste
- 1 tablespoon pumpkin pie spice
- 1/4 teaspoon cayenne pepper seasoning
- In a medium-size bowl mix together the egg whites, salt, brown sugar, vanilla paste, red pepper, and pumpkin pie spice.
- Stir in the nuts into the egg white mixture tossing together.
- Place on a parchment lined baking sheet and cook for one hour in the oven at 250°.
- Check on the nuts every 15 minutes and flip to ensure all nuts are toasting thoroughly.
- Remove from the oven after an hour and allow the nuts to cool.
- Store in a well sealed container.
