Rainbow Orzo Salad

  • 2 cups orzo, cooked according to package instructions
  • 1 cup cucumber, chopped
  • 1 cup red pepper, chopped
  • 1/2 cup red or green onions, chopped
  • 1 cup garbanzo beans, drained
  • 2 cups fresh spinach
  • Mason jars


  • 1/2 cup olive oil
  • 1/4 cup vinegar or lemon juice
  • 1 tablespoon oregano
  • Salt and pepper, to taste

Mix together the orzo & veggies in a medium sized bowl. In a small bowl whisk together all of the ingredients. Pour the dressing over the salad. Store the salad in individual mason jars for easy lunches!
