Ancient Grain Salad

  • 3 cups Ancient grains, prepared according to package
  • 1/2 cup chopped red onion
  • 1 red pepper, diced
  • 1/4 cup Toasted almonds
  • 1/4 cup Golden raisins
  • Olive oil
  • Salt & pepper
  • Arugula
  • Mason jar

Add grains & veggies to a large bowl and mix well. Drizzle with olive oil and toss together. Fill the mason jars 3/4 of the way and add a handful of arugula on top. Seal and store in the refrigerator for up to a week.
