Nutty Turtles with Sea Salt

  • 1 pound pecan halves or whole almonds
  • 1 pound caramel
  • 1 cup semi sweet chocolate chips
  • 1 cup bittersweet chocolate chips
  • Holiday sprinkles
  • Sea salt flakes
  1. Set 5 to 6 pecan halves or whole almonds together on a parchment lined baking sheet.
  2. Form a circle with the nuts with the ends touching.
  3. Continue doing this till you have 12 to 15 rounds on the baking sheet at least 2 inches apart.
  4. Heat the caramel in the microwave in a small bowl just till it is warm enough to form a ball.
  5. Do not heat the caramel in the microwave in a small bowl just till it is warm enough to form a ball.
  6. Do not heat the caramel till it is liquid.
  7. Use a metal teaspoon to dip into the caramel and then use another spoon to set it on top of the nut piles.
  8. Continue doing this until all the nuts are covered.
  9. Cut a small square of parchment paper approximately 6 x 6 and gently press your hands on top of the parchment paper to press down the caramels.

  11. Set the turtles in the refrigerator for 5 to 10 minutes to harden.
  12. While the turtles are chilling, warm the chocolate in the microwave in a small glass bowl.
  13. Heat on medium for 30 seconds increments until melted.

To dip turtles: simply lift the turtles off the baking sheet and dip the tops only into the chocolate and return to the baking sheet. Sprinkle with sea salt and or decorative sprinkles. Return to the refrigerator for 5 to 10 minutes or until chocolate has set. Package the turtles in decorative tins or boxes. Keep in a cool location in your home until you are ready to give or nibble on.
