Warm Spinach Salad

  • One package baby spinach
  • 4 slices bacon, cooked crisp(keep bacon fat)
  • One cup of sliced mushrooms
  • One quarter red onion, sliced thin
  • 3 Tablespoons bacon grease
  • One Tablespoon honey
  • 3-4 Tablespoons of balsamic vinegar
  • Toasted Pumpkin seeds
  1. Place skillet with bacon grease on the stove top and warm over medium heat!
  2. Stir in the honey, balsamic vinegar, salt and pepper.
  3. Cook for 1 to 2 minutes and remove from the heat.
  4. Put all of the veggies on a platter or in a medium sized salad bowl and drizzle the warm vinaigrette over the top.
  5. Sprinkle with pumpkin seeds before serving.
