Warm Spinach Salad
- One package baby spinach
- 4 slices bacon, cooked crisp(keep bacon fat)
- One cup of sliced mushrooms
- One quarter red onion, sliced thin
- 3 Tablespoons bacon grease
- One Tablespoon honey
- 3-4 Tablespoons of balsamic vinegar
- Toasted Pumpkin seeds
- Place skillet with bacon grease on the stove top and warm over medium heat!
- Stir in the honey, balsamic vinegar, salt and pepper.
- Cook for 1 to 2 minutes and remove from the heat.
- Put all of the veggies on a platter or in a medium sized salad bowl and drizzle the warm vinaigrette over the top.
- Sprinkle with pumpkin seeds before serving.
