Skillet Bacon Jalapeño Cornbread
 
  • 4 slices bacon, chopped
  • 1 jalapeño, diced
  • 1 cup roasted corn
  • 1 box cornbread mix, prepared according to package instructions
  • 1 cup milk
  1. Preheat oven to 400°.
  2. Fry the bacon and tamales together in a cast iron skillet until browned.
  3. Stir in the roasted corn and cook to warmed through.
  4. Prepare the corn bread mix according to package instructions.
  5. Stir in 1 cup of shredded cheddar cheese into the cornbread batter.
  6. Pour the batter into the hot skillet stir in the bacon, jalapeño, and corn.
  7. Bake for 30 minutes or until cornbread is cooked through.
  8. Serve warm.
