Pumpkin Spice Nut Blend

  • 1 cup cashews
  • 1 cup walnuts
  • 1 cup whole pecans
  • 1/2 cup pepitas
  • 1 cup roasted unsalted peanuts
  • 1/2 cup macadamia nuts
  • 2 egg whites
  • 3/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1 tablespoon vanilla paste
  • 1 tablespoon pumpkin pie spice
  • 1/4 teaspoon cayenne pepper seasoning
  1. In a medium-size bowl mix together the egg whites, salt, brown sugar, vanilla paste, red pepper, and pumpkin pie spice.
  2. Stir in the nuts into the egg white mixture tossing together.
  3. Place on a parchment lined baking sheet and cook for one hour in the oven at 250°.
  4. Check on the nuts every 15 minutes and flip to ensure all nuts are toasting thoroughly.
  5. Remove from the oven after an hour and allow the nuts to cool.
  6. Store in a well sealed container.
