Lemon Garlic Pasta

  • 7 cloves roasted garlic
  • 1 small onion, diced
  • 1 teaspoon lemon zest
  • Juice of one lemon
  • 1/4 pound fontina cheese, cubed
  • 1/4 cup Parmesan cheese
  • Salt and pepper
  • Hot spaghetti noodles
  1. Sauté the onion with the roasted garlic and lemon zest.
  2. Add the spaghetti noodles and lemon juice to the pan.
  3. Sprinkle the hot pasta with Fontina and Parmesan.
  4. Stir the cheese in to the pasta add spoonfuls of hot “magic pasta water” to the pan to create a sauce.
  5. Add salt and pepper to taste and serve with a sprinkling of fresh Parmesan cheese and chopped Italian parsley.
