Fancy Chocolate Pudding

  • 2 1/4 cup whole milk
  • 1/2 cup sugar
  • 3 tablespoon unsweetened cocoa powder
  • Pinch of salt
  • 3 tablespoon corn starch
  • 2 egg yolks
  • 1 egg
  • 8 ounces bittersweet or semi sweet chocolate chips
  • 2 ounces unsalted butter
  1. In a saucepan, whisk together the milk, cocoa, sugar and salt.
  2. Bring to a rapid simmer.
  3. In a small bowl whisk together the cornstarch and eggs.
  4. Using a ladle add a spoonful warm milk mixture to the eggs while whisking.
  5. Add 2 more spoonfuls of milk continuing to whisk.
  6. Now reduce the heat of the remaining cocoa/milk mixture.
  7. Combine the egg and cocoa mixture to the warm milk by rapidly whisking.
  8. Continue to whisk together until the pudding becomes thick enough to coat the back of a spoon.
  9. Remove from the heat and stir in the chocolate chips and butter.
  10. Continues to rain until chocolate and butter is melted and pudding is velvety smooth.
  11. Use a little too poor the hot pudding into cups.
  12. Cover with plastic wrap and chill for 2 to 3 hours.
