Key Lime Cheesecake Bars

  • 2 1/2 cups graham crackers crumbs
  • 1/4 cup brown sugar
  • pinch salt
  • 1 stick unsalted butter, melted
  • 1 (8 ounce) container cream cheese, room temperature
  • 14 oz. can condensed milk
  • 4 egg yolks
  • 1 tbsp. lime zest
  • ½ c. key lime juice
  • 2-3 key limes, cut into slices
  • Zest of 1 lime
  1. Preheat oven to 375 degrees.
  2. Spray a 9x13 pan with nonstick cooking spray.
  3. In a medium sized bowl, mix together the graham cracker crumbs, brown sugar and butter.
  4. Press into the bottom of the pan.
  5. Bake for 15 minutes.
  6. While the crust is baking, beat together the cream cheese, sweetened condensed milk, lime zest, & eggs till smooth or 2-3 minutes.
  7. Slowly pour in the lime juice and continue beating.
  8. Pour the key lime filling over the hot crust and return to the oven to bake for 15 minutes.
  9. Remove from the oven and cool completely.
  10. Cover with plastic wrap and chill for at least 4 hours.
  11. Cut into bars and serve with a dollop of whipped cream and a key lime slice.
