Southern Tomato Pie
- 1 refrigerated pie crust
- 2-3 ripe tomatoes (heirlooms look gorgeous on this pie!)
- 2 tablespoon butter flavored olive oil
- 1 small onion, sliced thin
- 1 teaspoon fresh thyme
- 1⁄4 tsp. freshly ground black pepper
- 1⁄3 cup fresh basil leaves, sliced thin
- 1⁄2 cup mayonnaise
- 1⁄3 cup grated cheddar cheese/ Monterey Jack cheese
- 1⁄3 cup grated Parmigiano-Reggiano cheese
- Preheat oven to 400 degrees.
- Place the pie crust in a 9 inch pie pan and crimp edges.
- Set pie pan & crust in freezer till ready to assemble and bake.
- Sauté the onions with olive oil, thyme and fresh basil (save some basil for garnish).
- Combine the sautéed tomatoes and onions with the mayonnaise, Parmesan cheese, Italian seasoning, and grated cheddar and Monterey Jack.
- Pour into the bottom of the prepare a piecrust and spread.
- Topped with sliced fresh tomatoes.
- Sprinkle with a little garlic salt and fresh cracked pepper.
- And bake for 25 minutes.
