Southern Tomato Pie

  • 1 refrigerated pie crust
  • 2-3 ripe tomatoes (heirlooms look gorgeous on this pie!)
  • 2 tablespoon butter flavored olive oil
  • 1 small onion, sliced thin
  • 1 teaspoon fresh thyme
  • 1⁄4 tsp. freshly ground black pepper
  • 1⁄3 cup fresh basil leaves, sliced thin
  • 1⁄2 cup mayonnaise
  • 1⁄3 cup grated cheddar cheese/ Monterey Jack cheese
  • 1⁄3 cup grated Parmigiano-Reggiano cheese
  1. Preheat oven to 400 degrees.
  2. Place the pie crust in a 9 inch pie pan and crimp edges.
  3. Set pie pan & crust in freezer till ready to assemble and bake.
  4. Sauté the onions with olive oil, thyme and fresh basil (save some basil for garnish).
  5. Combine the sautéed tomatoes and onions with the mayonnaise, Parmesan cheese, Italian seasoning, and grated cheddar and Monterey Jack.
  6. Pour into the bottom of the prepare a piecrust and spread.
  7. Topped with sliced fresh tomatoes.
  8. Sprinkle with a little garlic salt and fresh cracked pepper.
  9. And bake for 25 minutes.
