Sassy Mama: Cucumber Salad

-Easy Pickled Cucumbers & Onions
-1 cup water
-1/2 cup white vinegar
-1/4 cup vegetable oil
-2 teaspoons salt
-1 tablespoon fresh, coarsely ground black pepper
-3 cucumbers, peeled and sliced 1/4-inch thick
-1 onion, sliced and separated into rings
Whisk together the vinegar, oil, sugar, water & pepper till sugar dissolves.
Place the onions and cucumbers in a medium sized bowl and pour the dressing over the top.
Cover with plastic wrap and refrigerate for at least four to six hours before serving.
