Sassy Mama: Watermelon Salad
On News 9 at 4, Sassy Mama shows Karl and Bobbie how to make Watermelon Salad:
-5 tablespoons fresh lime juice (from 3 large limes)
-1 1/2 tablespoons honey
-1 tablespoon finely chopped fresh mint
-1 tablespoon grated fresh ginger (from 1 [4-inch] piece)
-1 1/2 teaspoon kosher salt, divided
-1/3 cup olive oil
-6 cups watermelon cubes, seedless watermelon
-3 cups cherry tomatoes, halved
-1/4 cup feta cheese, crumbled
Put the watermelon in a medium-size bowl, sprinkle with salt, drizzle with honey and toss together.
Add the freshly chopped mints and feta cheese. Add the olive oil and falls together.
Cover the bowl with plastic wrap and refrigerate for four hours.
