Summer Strawberry Pie

  • 4 cups of sliced strawberries
  • 1 cup sugar
  • 3/4 cup water
  • 3 tablespoon corn starch
  • 3 tablespoon strawberry jello
  • 1 prepared pie crust or graham cracker crust
  1. In a sauce pan, whisk the water, cornstarch, and sugar over medium high heat until it thickens.
  2. Remove from the heat and whisk in the Jell-O.
  3. Place the warm mixture in an ice bath and allow it to cool stirring occasionally.
  4. Put sliced strawberries to a bowl and once the strawberry gel has cooled pour over the top of the strawberries and toss together.
  5. Spoon and to prepare a piecrust and cover with plastic wrap.
  6. Chill for up to four hours or overnight before serving.
  7. Serve with a scoop of fresh whipped cream on top.
