Summer No Guilt Salad

  • 1 package prepared quinoa
  • 1 can white kidney beans, drained well
  • 3 cups cherry tomatoes, cut in half
  • 1 red pepper, chopped
  • 1/4 red onion chopped
  • Juice of one lemon
  • Olive oil
  • Salt and pepper
  1. Combine all of the ingredients in a large bowl and drizzle with olive oil.
  2. Add salt and pepper to taste and chill until you are ready to eat.
