Weekday Huevos Rancheros

  • 4 corn tortillas
  • 4 eggs
  • 3/4 cup Mexi shredded cheese
  • Black beans, drained & warmed
  • Pico de gallo
  • Sour cream
  1. Heat a medium sized skillet over high heat.
  2. Drizzle with olive oil.
  3. Add tortilla and warm and then flip over.
  4. Sprinkle with a small amount of cheese.
  5. Allow cheese to melt and then add egg on top of cheese.
  6. Cook till egg edges turn white and then flip over.
  7. Remove the tortilla from the pan and serve egg side up with warm black beans, a spoonful of pico de gallo & sour cream.
  8. Sprinkle with cheese.
