Guiltless Blueberry Cobbler

  • 1 1/4 cup Vegan baking mix
  • 1 cup Swerve brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup melted and salted butter or coconut oil
  • 1/4 cup
  • 4 cups fresh blueberries
  • 2 tablespoons coconut sugar
  • Coconut whipped topping or heavy cream
  1. Preheat oven to 350°.
  2. Pour the fresh blueberries into a 9 inch deep dish pie pan.
  3. Sprinkle with coconut sugar and toss together.
  4. And a medium-size bowl mix together the vegan baking mix, swerve brown sugar, pecans and cinnamon.
  5. Pour the melted butter or coconut oil over the dry mixture and stir together to crumbles form.
  6. Spread the crumbles on top of the blueberries and bake for 30 minutes until golden and bubbly.
  7. Drizzle with heavy whipping cream or coconut whipped topping.
