Twice Baked Casserole

  • 4 cups riced cauliflower, steamed and drained
  • 1/4 cup Greek yogurt
  • 1/2 cup light cottage cheese
  • 1/4 cup Parmesan cheese
  • 1 teaspoon salt & pepper
  • 2 tablespoons butter flavored olive oil
  • 1 1/2 cups cheddar cheese, shredded
  • Two slices cooked bacon
  • Optional: chives
  1. Preheat oven to 375°.
  2. Spray a soufflé pan or individual oven safe ramekins with nonstick cooking spray.  
  3. Put all of the ingredients in a blender and process till smooth.
  4. Pour the mashed cauliflower blend into the prepared baking dish.
  5. Sprinkle with additional cheddar cheese and bake for 30 to 45 minutes until golden brown and bubbly.
