Spring Salad

  • 1/2 cup sour cream
  • 2 tablespoon olive oil
  • Juice of 1/2 lemon
  • 1 clove garlic, minced
  • Splash of Sriracha sauce
  • 2 tablespoons chives, chopped
  • 2 tablespoon mint, chopped
  • Salt and pepper
  • 1 avocado, cubed
  • 2 green onions, chopped
  • 2 radishes, chopped
  • 1 cup sugar snap peas, sliced
  • 1 cup cherry tomatoes, sliced in half

To make the dressing: Whisk together the sour cream, olive oil, lemon juice, sriracha sauce, chives and mint. Season with salt and pepper. Put all of the vegetables in a bowl and toss with the dressing. Garnish with chives.
