Fancy Egg Salad

  • 6 hard boiled eggs, peeled
  • 1/4 cup mayonnaise
  • 1 tablespoon capers
  • 1 teaspoon caper juice (from capers bottle)
  • 2 tablespoon mustard
  • Fresh chives, chopped
  • 1/2 teaspoon tarragon
  • 2 teaspoon sunflower seeds
  1. Finally chopped hard-boiled eggs and placed in a bowl.
  2. In another bowl, mix together the mayonnaise in the mustard the salt and pepper and the juice of the capers.
  3. Add the caper berries and herbs to the eggs.
  4. Spoon the mayonnaise dressing over the top and toss together.
  5. Serve on toasted rye bread or wheat crackers.
