Lacey's Fried Morel Mushrooms

  • Morel mushrooms, cleaned & sliced in half
  • 2 cups all purpose flour
  • 3 eggs, beaten
  • 1/4 cup water
  • 1 teaspoon seasoning salt
  • 2-3 cups canola oil

Make sure and soak the morels in ice water for at least 2 to 3 hours to rinse all dirt or debris from the mushrooms. Carefully remove the Mushrooms from the ice water and allow them to drain on a dish towel and then carefully Pat them dry. In a skillet, add the oil and warm over medium high heat.

To prepare the mushrooms: set the flour in a shallow plate and add seasoning salt. Pour the beaten egg and water into another shallow dish and season with salt and pepper. To dredge the mushrooms: Simply place the mushroom in the flour first making sure the coat completely. Then transfer the mushrooms to the egg wash. Make sure to coat them entirely and then back into the flour. Using tongs, set the breaded mushrooms into the hot oil and cook on both sides till golden brown. Set the cooked mushrooms on a paper towel lined plate and sprinkle with a little more seasoning salt. Enjoy!
