Herb Artichoke Dipping Sauce

  • 1 large egg yolk, at room temperature
  • 1/2 teaspoon Dijon mustard
  • 3/4 cup olive oil (good quality)
  • 1 teaspoon white-wine vinegar
  • 1 1/2 teaspoons fresh lemon juice
  • 1/4 teaspoon white pepper or pepper
  • 1/4 teaspoon lemon zest
  • 1 teaspoon fresh dill
  • 1 teaspoon minced shallots
  1. In a blender or using an immersion blender, beat together the egg, dijon mustard, and 1/4 teaspoon salt.
  2. Slowly add in the olive oil until it is incorporated into the mixture.
  3. Then slowly pour in the white wine vinegar, lemon juice, and pepper until the sauce thickens.
  4. Pour the mixture into a small bowl and stir in the lemon zest, dill and shallots.
  5. Chill till you are ready to serve.
