Parisian Hot Chocolate (aka sipping chocolate)

2 cups whole milk

6 ounces top quality dark or bittersweet chocolate (at least 70%)) , chopped finely

2 tablespoons brown sugar (optional and according to taste)

1/8 teaspoon espresso powder

Tiny pinch of sea salt

In a medium sized sauce pan, over medium low heat add the milk, Brown sugar and espresso powder. Heat just tell it begins to simmer. Do not boil. Add to finally chop chocolate into the warm milk and stir. Continue to stir until the chocolate is melted and then carefully pour into small tea cups. Before serving add a pinch of sea salt to the top and serve with butter cookies.
