Greek Chicken Piccata

  • 4 boneless skinless chicken breasts
  • 1 cup flour
  • Salt and pepper
  • 1/2 cup unsalted butter
  • 1 cup whippinng cream
  • 1/4 cup sundried Tomatoes
  • 1/4 cup capers
  • Juice of one lemon
  • 1 teaspoon garlic
  • 2 teaspoon oregano
  • Angel Hair Pasta, cooked al dente
  1. Heat a large skillet over medium heat with 3 tablespoons of olive oil in the pan.
  2. Salt and pepper both sides of the chicken and then dredge both sides of chicken in flour.
  3. Place the chicken in the pan and cook till browned on both sides.
  4. Once the chicken is cooked remove from the pan and set on top of the hot angel hair pasta.
  5. To make the sauce: Stir in the garlic, butter, lemon juice, oregano, sundried tomatoes and capers.
  6. Stir in the whipping cream and continue to cook till warmed through.
  7. Add salt and pepper to taste.
  8. Pour the sauce over the pasta and chicken.
  9. Serve with steamed broccoli!
