Greek Chicken Piccata

Greek Chicken Piccata
- 4 boneless skinless chicken breasts
- 1 cup flour
- Salt and pepper
- 1/2 cup unsalted butter
- 1 cup whippinng cream
- 1/4 cup sundried Tomatoes
- 1/4 cup capers
- Juice of one lemon
- 1 teaspoon garlic
- 2 teaspoon oregano
- Angel Hair Pasta, cooked al dente
- Heat a large skillet over medium heat with 3 tablespoons of olive oil in the pan.
- Salt and pepper both sides of the chicken and then dredge both sides of chicken in flour.
- Place the chicken in the pan and cook till browned on both sides.
- Once the chicken is cooked remove from the pan and set on top of the hot angel hair pasta.
- To make the sauce: Stir in the garlic, butter, lemon juice, oregano, sundried tomatoes and capers.
- Stir in the whipping cream and continue to cook till warmed through.
- Add salt and pepper to taste.
- Pour the sauce over the pasta and chicken.
- Serve with steamed broccoli!
