Apple French Toast Bake

  • 8 slices Cinnamon Raisin Bread, cubed
  • 6 eggs
  • 1 cup pumpkin spice coffee creamer
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 cup sugar
  • 2 apples, sliced thin
  • 1/4 cup chopped pecans
  1. Spray a 8x8 casserole dish with nonstick cooking spray.
  2. Place the slices of apple in the bottom of the baking pan.
  3. Add the cubes of raisin bread. In a small bowl beat the eggs well.
  4. Beat in the creamer, vanilla and cinnamon.
  5. Pour the custard mixture over the top of the bread cubes.
  6. Press the bred down into the custard.
  7. Cover with plastic wrap and refrigerate for 2 hours or overnight.
  8. Sprinkle with nuts before baking.

To cook: Bake in a 350 degree oven uncovered for 30 minutes.
