Country Fried Potatoes

  • 2 to 3 Russet Potatoes (one per person), peeled 
  • ½ onion, chopped
  • 1/2 green pepper
  • 1/2 red pepper
  • 3 tablespoon canola oil
  • 2 T. butter
  • 1/2 teaspoon garlic salt
  • Salt and pepper, to taste
  1. In a skillet, add the canola oil and butter over medium heat.
  2. Cut the peeled potatoes in half and slice thin.
  3. Add the onions, peppers and garlic salt to the hot oil and cook till tender.
  4. Add the sliced potatoes to the pan and stir to coat with oil.
  5. Cook the potatoes (untouched for 3-4 minutes) then stir and flag potatoes so they can equally brown on all sides.
  6. Continue until potatoes are cooked through.
  7. Serve with salt and pepper.
