The Captain Sandwich

  • 1 pound pork loin
  • 4 hamburger buns
  • 1 cup Captain Crunch cereal, crumbs
  • 1 sleeve saltine crackers, crumbs
  • Seasoning salt
  • 3 eggs, beaten
  • 1 cup flour
  • Iceberg lettuce
  • Pickles
  1. Slice the pork loin into 1/2 inch slices.
  2. Place one by one the pork loin slices into a gallon ziploc bag and pound with a mallet till they are 1/4 inch thick.
  3. Place the cereal and saltines in a shallow dish.
  4. Do the same with the beaten egg and flour.
  5. Heat a half inch of canola oil in a medium size skillet till it reaches 350°.
  6. Dredge the pork loin in flower then dip it in the egg mixture and press into the Cap'n Crunch and cracker crumbs.
  7. Carefully place the pork loin in the hot oil and cook for 3 to 4 minutes on each side or until golden brown.
  8. While the pork loin is cooking add a Schmeer of mayonnaise onto each side of the hamburger bun.
  9. Place the cooked pork tenderloin on the bun and topped with lettuce and pickles serve.
