Meat Lovers One Pot Dinner

  • 1/2 pound Italian sausage
  • 1/2 pound frozen meatballs, thawed and cut into 1/4
  • 1 small onion, chopped
  • 3 cloves garlic minced
  • 1 (28 oz can) crushed tomatoes
  • 1/2 cup shredded carrots
  • 1 cup sliced mushrooms
  • 1 cup fresh kale, chopped
  • 2 1/2 cups chicken stock
  • 2 cups shell pasta
  • 2 tablespoon tomato paste
  • 1 tablespoon Italian seasoning
  • 1 cup heavy cream
  • Fresh basil, cut into strips
  • 1 cup grated mozzarella cheese + extra for topping if desired
  • 1/4 cup grated parmesan cheese
  1. In a large dutch oven or stock pot brown the sausage and meatballs with the onion until browned (about 10 minutes).
  2. Add in the garlic, carrots, mushrooms and kale and cook for one minute.
  3. Add in the crushed tomatoes, broth, pasta, tomato paste, and Italian seasoning.
  4. Stir well then bring to a boil.
  5. Reduce heat and simmer for 10 minutes or until pasta is just tender (stir occasionally to prevent sticking).
  6. Stir in cheeses until melted and remove from heat.
  7. Sprinkle with extra mozzarella if desired.
