Strawberry Vanilla Freezer Jam

  • 4 cups strawberries, chopped
  • 4 cups sugar
  • 1 box Sure Gel fruit pectin
  • 1 vanilla bean
  • 1 tablespoon vanilla extract
  • 3 pint canning jars, sterilized
  1. In a large bowl place the chopped strawberries and mash with a potato masher or pulse in a food processor till chunky.
  2. Add the sugar into the fruit.
  3. Cut the vanilla bean in half and scrape the seeds from the inside and add into the strawberry mixture stir.
  4. Allow the strawberry mixture to sit for at least 10 minutes.
  5. In a small sauce pan bring 3/4 of a cup of water and one packet of sure gel fruit pectin to a boil for 1 minute.
  6. Stir to help remove any lumps.
  7. Pour the boiled pectin into the strawberries and stir for 3 minutes to make sure the pectin is evenly distributed.
  8. Ladle the warm jam into the jars.
  9. Screw on the lids and allow jam to sit on counter for 24 hours before placing in the freezer to store.
