One Pan Enchilada Casserole


  • 1 Pound ground beef
  • 1/2 Cup chopped onion
  • 1 Cup chopped green and red pepper
  • 1 Can black beans, drained
  • 1 Uncle Ben's Mexican Rice packet
  • 2 Cups salsa
  • 1 Envelope taco seasoning
  • 10 Corn tortillas, sliced thin
  • 2 Cups Mexi-blend cheese
  • Cilantro, chopped
  • Sliced avocado


  1. In a large tall sided skillet, sauce the ground beef till browned.
  2. Drain any excess grease.
  3. Return the ground beef to the pan and saute the onion and peppers till tender.
  4. Stir in the taco seasoning, salsa, black beans, and rice.
  5. Stir together.
  6. Place the sliced tortillas on top and sprinkle with cheese.
  7. Place a lid on the pan and simmer till cheese is melted.
  8. Remove from the heat and sprinkle with chopped cilantro and sliced avocado.
