Thin Mint Ice Cream Sandwiches

• Thin Mints
• Ice Cream

1. Freeze the Thin Mints for 2 hours before assembly.
2. Allow the ice cream to soften slightly.
3. Use a Mini ice cream scoop to place onto one thin mint cookie. 
4. Place another Thin Mint cookie on top pressing slightly.
5. Roll the edges in the topping of your choice and place on a parchment lined baking sheet and freeze.
6. Continue with the rest of the cookies!
7. Allow the cookies to freeze for 2 hours and then wrap in plastic wrap to store in freezer till you are ready to eat!
