One Pot Sausage and Cheese Pasta

  • 1 package smoked sausage, cut into thin slices
  • 1/2 onion, diced
  • 3 cups penne pasta, uncooked
  • 2 cups chicken broth
  • 1 (10 ounce) jar roasted red peppers
  • 2 cups Muenster cheese, grated
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup mushrooms, sliced
  • 3 cups baby spinach
  • 2 cloves garlic, diced
  • 1/2 cup fresh Parmesan, grated
  1. Place all of the ingredients (except for the parmesan cheese) in a large stock pot.
  2. Cook for 20 minutes covered over medium heat.
  3. Carefully remove the cover and stir to coat all of the ingredients in the cheese sauce.
  4. Serve with a sprinkling of Parmesan cheese.
