Caramel Nut Corn

  • 13 cups popped popcorn (not microwave)
  • 2 cups brown sugar
  • 1 cup unsalted butter
  • 1 teaspoon sea salt
  • 1/2 cup dark corn syrup
  • 1 teaspoon baking soda
  • 1 tablespoon vanilla extract
  1. Place the brown sugar, butter, sea salt and corn syrup in a large microwave safe plastic bowl.
  2. Microwave on high for 5 minutes.
  3. Carefully remove the how mixture from the microwave and add in the baking soda and vanilla.
  4. Stir together and then pour over the popcorn and toss to coat all of the popcorn.
  5. Place the pop con on the parchment lined baking sheet and bake at 250° for 30 minutes.
  6. Stir halfway through the baking time.
  7. Once done baking remove from the oven and allow to cool.
  8. Store in an airtight container.
