Mango Pepper Chicken with Broccoli
- 1 pound boneless skinless chicken breast, cut into cubes
- 1/2 onion, chopped
- 1 tablespoon oil
- 1/4 cup pepper jelly
- 1/4 cup BBQ sauce
- 2 tablespoon soy sauce
- 1 tablespoon minced garlic
- 1 cup mango slices
- 3 cups broccoli florets, steamed
- In a large skillet add oil and heat to medium high and then add in the chicken.
- Cook till the chicken is no longer pink.
- Add in the onion and garlic and continue to cook.
- Stir in the pepper jelly, hoisin sauce, and mango slices.
- Continue to simmer together for 5 minutes.
- Carefully add the steamed broccoli and toss to coat with the sauce.
- Serve over hot white or brown rice.
