Skinny Fajita Soup

  • 2 packages chicken fajita meat (pre-cooked)
  • 1 teaspoon olive oil
  • 2 bell peppers, seeded and chopped
  • 1 red onion, peeled and chopped
  • 4 garlic cloves, minced
  • 15 ounce can black beans, drained
  • 15 ounce can fire roasted diced tomatoes
  • 8 cups chicken broth
  • 1 package taco seasoning mix
  • 1 Uncle Ben's brown rice (precooked pack)
  • Mexi shredded cheese and cilantro, garnish
  1. In a large sauce, 6 or 8-quart pot over medium heat, add the oil, chopped bell peppers, onions, and garlic. Cook till the veggies are tender.
  2. Add in the chicken, black beans, fire roasted tomatoes and chicken. Simmer till soup is warm.
  3. Add the rice packet and cook till warm.
  4. Serve with sprinkle of cheese, sliced avocado and cilantro.
