Fat Jack's Crab Cakes

  • 1 1/2 pound fresh lump or claw crab meat
  • 1/2 cup diced red and green pepper
  • 2 green onions, chopped
  • 1/2 cup mayonnaise
  • Juice of 1 lemon
  • 2 teaspoon Old Bay seasoning
  • 2 teaspoon fresh parsley
  • 1/2 cup bread crumbs, divided
  • 1 eggs, beaten
  1. Cooking oil
  2. In a large bowl combine the crab meat, diced vegetables, mayonnaise, lemon, Old Bay seasoning, parsley, 1/4 cup bread crumbs, and beaten egg. Stir to combine.
  3. Form patties and then dredge in bread crumbs and fry in vegetable oil till browned.
  4. Serve with cocktail sauce or mustard sauce.
