Dried Edamame Snack Mix

  • 1 package frozen edamame (shelled and peeled)
  • 1/2 teaspoon sea salt
  • 2 tablespoon olive oil
  • 1/2 cup sesame sticks
  • 1/2 cup dried blueberries
  1. Preheat oven to 350 degrees.
  2. Line a baking sheet with parchment paper.
  3. In a medium sized bowl, place the thawed edamame beans.
  4. Drizzle the beans with olive oil and then sprinkle with sea salt. Stir together.
  5. Pour the beans onto the baking sheet and cook for 1 hour or until golden brown and crunchy. Allow the beans to cool.
  6. Toss the beans together with the sesame sticks and dried fruit.
  7. Store in an airtight container.
