Asian Chicken Salad

  • 1 rotisserie chicken, meat removed and shredded
  • 1/2 pound asparagus
  • 1 red bell pepper, cored and seeded
  • 2 green onions, sliced
  • 2 tablespoon sliced almonds
  • 1 can Mandarin oranges, drained
  • 1/4 cup Asian Dressing
  • 1 tablespoon creamy peanut butter
  1. Place the chicken, asparagus, red peppers, scallions, sesame seeds, almonds and oranges in a large bowl & toss together.
  2. In a small bowl, combine the Asian dressing and peanut butter.
  3. Stir till smooth.
  4. Pour the dressing over the chicken and veggies.
  5. Toss together and serve over a bed of lettuce or with your favorite coconut rice.
