Toffee Shortbread Cookies
- 2 sticks Braum's unsalted butter, softened
- 3/4 cup powdered sugar
- pinch of salt
- 1 teaspoon vanilla paste or extract
- 2 cups all purpose flour
- 1/2 cup toffee bits (plus more or decorating)
- 1 package milk or dark chocolate chips, melted
- In a medium sized bowl, use an electric mixer to beat together the butter and powdered sugar till light and fluffy.
- Add in the vanilla and salt.
- Slowly mix in the flour till it is completely incorporated into the butter mixture.
- Add the toffee bits last. Wrap the shortbread dough in plastic wrap and chill for at least an hour before baking.
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- Once the dough is chilled, roll out the dough on a lightly flour dusted surface.
- Roll the dough to 1/4 inch thickness and then cut out into your desired shape using a cooking cutter.
- Bake for 13-15 minutes or until the shortbreads are golden brown.
- Melt the chocolate chips and dip each cookie in the chocolate and then sprinkle with remaining toffee pieces.
- Place each cookie on parchment paper and allow the chocolate to set.
- Store your cookies in a cookie tin or airtight container.
