Toffee Shortbread Cookies

  • 2 sticks Braum's unsalted butter, softened
  • 3/4 cup powdered sugar
  • pinch of salt
  • 1 teaspoon vanilla paste or extract
  • 2 cups all purpose flour
  • 1/2 cup toffee bits (plus more or decorating)
  • 1 package milk or dark chocolate chips, melted

  1. In a medium sized bowl, use an electric mixer to beat together the butter and powdered sugar till light and fluffy.
  2. Add in the vanilla and salt.
  3. Slowly mix in the flour till it is completely incorporated into the butter mixture.
  4. Add the toffee bits last. Wrap the shortbread dough in plastic wrap and chill for at least an hour before baking.
  5. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  6. Once the dough is chilled, roll out the dough on a lightly flour dusted surface.
  7. Roll the dough to 1/4 inch thickness and then cut out into your desired shape using a cooking cutter.
  8. Bake for 13-15 minutes or until the shortbreads are golden brown.
  9. Melt the chocolate chips and dip each cookie in the chocolate and then sprinkle with remaining toffee pieces.
  10. Place each cookie on parchment paper and allow the chocolate to set.
  11. Store your cookies in a cookie tin or airtight container.
