Cherry Chocolate Slice and Bakes

  • 1 cup unsalted butter- room temperature
  • 1/2 cup powdered sugar
  • 1/2 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup maraschino cherries-chopped
  • 1/4 cup chopped chocolate chips
  1. In a large bowl beat together the butter and powdered sugar till light and fluffy. About 2 minutes.
  2. Add in the vanilla and salt while beating.
  3. Drain the cherries and rinse with cold water.
  4. Chop the cherries and place on a paper towel to thoroughly drain.
  5. Chop the chocolate chips into small chunks.
  6. Add the chocolate chunks to the butter mixture. Slowing add the flour and the cherries.
  7. Continue to mix until it forms a large ball.
  8. Remove the cookie dough ball from the bowl and place on an extra large piece of plastic wrap.
  9. Roll out the dough into a large log that is about 3 inches in diameter.
  10. Wrap the log completely in plastic wrap and twist the ends and place in the refrigerator for at least 2 hours.
  11. To bake: Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  12. Remove the cookie dough roll from the refrigerator.
  13. Cut into 1/4-1/2 inch slices and bake for 10-15 minutes or until lightly golden brown.
