Green Chili Corn Cakes

  • 1 1/2 cups fresh corn
  • 6 pieces crisp bacon, crumbled
  • 1 can green chilis
  • 1/2 cup red onion, diced fine
  • 1 cup corn meal, gluten free
  • 1/4 cup Gluten Free baking mix
  • 3/4 cup milk
  • 1/4 cup sour cream
  • 1 egg, beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon baking powder
  • 1/2 stick salted butter
  1. In a large bowl, combine all of the ingredients and stir.
  2. In a large non-stick skillet, melt the butter and then using a large ice cream scoop, add scoops of the corn mixture to the hot skillet.
  3. Cook like a pancake and flip when browned. Continue cooking other side until browned on both sides. Serve with the salsa of your choice.
