Quickie Chicken and Mushroom Piccata

4 chicken breasts, pounded till thin

1/2 cup flour

1 cup sliced mushrooms

1/2 stick butter

1 cup chicken broth

1/2 cup whipping cream

Juice of two lemons

Salt and pepper

ADD:

Fresh parsley

Capers

Dredge chicken in flour and place in a sauté pan and cook till browned on all sides. Once the chicken is cooked, remove from the pan. Deglaze the pan with chicken broth and lemon juice. Bring to a simmer and then add in the whipping cream. Stir in the mushrooms and capers. Pour the sauce over the chicken and serve.
