Ingredients:
3 cans black-eyed peas, drained and rinsed
4 slices thick cut bacon, chopped
1/2 red onion, chopped fine
1 green pepper, chopped
1 jalapeño, chopped
1 teaspoon kosher salt
1 teaspoon minced garlic
3 tablespoon pickled red onion
Instructions:
In a saucepan over medium heat brown the bacon, red onion, green peppers and jalapeño. Add in the salt, minced garlic and pepper. Place drained beans into the pot and simmer till warm. Serve with pickled onions!
