Springtime Quiche

7 large eggs

1 1/2 cups whipping cream

1 teaspoon salt

1/2 teaspoon cracked fresh pepper

1 cup fresh broccoli florets, chopped

1 cup ham steak, cubed and chopped

1 cup swiss cheese, grated

1/2 cup onions, thinly sliced

1/2 cup mushrooms, sliced thin

1 prepared pie crust

9 inch deep dish pie pan

Preheat oven to 400 degrees. Press the pie crust into the bottom up the sides of the pie pan or quiche pan. Place in the freezer to stay cool while preparing the filling. In a large sauté pan cook the shopped ham till browned lightly. Remove the ham and then sauté the broccoli and ham. Use 3 tablespoons of water to help deglaze the pan and then place the lid on sauté pan for 2 minutes to soften the broccoli. Remove from the pan. In a large mixing bowl whisk together the eggs, whipping cream, salt and pepper. Add in the swiss cheese, ham, broccoli and onions. Stir together. Pour into prepared pie crust. Place on a baking sheet. Cover with foil and bake for 50 minutes to 1 hour. Bake until cooked through. Remove from oven and allow it cool before serving.
