Our favorite local chef/cook David Brooks is here making a delicious Made-in-Oklahoma breakfast. This is just the thing your kids need before a big day playing outside.

This casserole includes delicious layers of Schwab's ham and Bar-S bacon.

Ingredients:

· Three large croissants

· One cup chopped ham from one Schwab's Holiday Ham

· 10 slices Bar-S Bacon, cooked and crumbled

· One cup sliced Gruyere cheese

· Six eggs

· One cup Hiland Heavy Whipping Cream

· One-fourth teaspoon salt

· One-half teaspoon pepper

· Two tablespoons honey

· One-fourth teaspoon ground nutmeg

Preparation:

1. Cut each croissant into five pieces. Place in a 1-quart casserole dish or deep-dish pie pan. Cover croissant pieces with ham, bacon and cheese.

2. In a large bowl, whisk eggs, cream, salt, pepper, honey and nutmeg. Pour over croissants, pushing croissants down so they're covered in the egg mixture. Cover, and keep refrigerated overnight.

3. Bake, covered, for 30 minutes in a preheated 325-degree oven. Uncover and bake 30 minutes, or until browned.
