Tiki Tenderloin Salad

1 pork tenderloin

1 teaspoon salt

1/2 teaspoon cumin

1/2 teaspoon chili powder

1/4 teaspoon dried chipolte pepper

1/2 teaspoon cinnamon

1 tablespoon olive oil

1/2 cup brown sugar

1 tablespoon garlic

Tabasco

2 oranges, peeled and sliced

2 cups baby spinach

1 package slaw mix

1 red bell pepper, thinly sliced

2 avocado, sliced

juice of 1 orange

juice of 1 lime

1 tablespoon mustard

1 teaspoon agave nectar

1/2 - 3/4 cup olive oil

Preheat oven to 350 degrees. Place all of the dry ingredients in a small bowl and then rub the pork loin. Heat a skillet and then add oil. Sear the tenderloin on all sides. Then place in the oven and cook for 20 minutes or until tenderloin is cooked through.

Citrus Viniagrette

Whisk together the juices, mustard, curry powder, salt, agave and pepper. Slowly add oil and whisk till emulsified.

To prepare salad:

Remove peel from oranges and cut into rings. Slice the avocados, and rough chop the spinach.
